Korean soup chain expands AI ordering system to help stores manage stock
Yuksudang is using AI to recommend ingredient orders at its Korean soup restaurants.
The chain, run by Ilyeon F&C, says the system uses each store’s past sales, the weather, the day of the week and local business conditions to suggest how much to order each day.
It was introduced in January as part of a plan to help stores operate with two staff members, alongside a system that supplies key ingredients in ready-to-use packs from a plant in Osong, North Chungcheong Province.
Use of the AI system reached 81.1% across 88 stores in September, up from 68.1% in August.
Since its introduction, more than 60% of franchise stores have placed orders using the AI’s suggested quantities without changes, the company says.
The system is intended to reduce waste and stockouts, while giving store owners more time for customers; the company says it plans to keep improving store operations using data from its locations.
