Japanese chef Takamasa Osawa turns biryani love into Michelin success
Imagine you taste a dish so yummy that you spend years learning how to make it.
That is what happened to Takamasa Osawa, a chef from Japan.
He went to India and tried biryani, a special rice dish, and loved it.
When he got home, he could not find biryani anywhere, so he learned to cook it himself.

His recipe blends Hyderabadi-style rice, Pakistani-inspired gravy and a Balochi meat technique, using basmati rice imported from Punjab and carefully selected Indian spices.
Osawa recently cooked for actor Ram Charan's family in Hyderabad and hosted a sold-out pop-up at Indian Accent in Mumbai, and he founded the Japan Biryani Association.
