Pinsa grows in popularity in France, while pizza remains far bigger

Pinsa is an oval Roman-style base made with a mix of wheat, rice and soy, and people can add their own toppings.

It has gained popularity in France, where it arrived two years ago, helped by social media and shops promoting recipes and ingredients alongside it.

Eight million were sold in one year, and the sector's revenue rose 289% over two years.

One Paris restaurant says pinsa now accounts for 80% of its sales, after the owner introduced it to customers by explaining and offering samples.

The dough is said to be lighter and easier to digest than pizza dough, but it costs four times as much to make.

Even with its recent growth, pinsa's revenue is still 27 times lower than pizza's.
