Migros trains restaurant staff to serve portions more consistently

An analysis at 118 Migros restaurants found about one-fifth of food waste on customers’ plates.

Migros says staff sometimes served more than the portions set out in recipes, including extra pasta, chips or vegetables.

The company is training staff to serve recipe portions consistently.

Migros says it has not cut portion sizes or removed ingredients, and customers can still ask for more.

The company says the change aims to reduce food waste for environmental and social reasons, though using resources more efficiently could also help restaurant finances.

A second analysis is planned for this autumn to check whether the changes affect food waste.
