Ferran Adrià says luxury hotel breakfasts should feature more Spanish products
Chef Ferran Adrià criticized Spanish hotels’ breakfast menus at the Turium International Forum in Madrid, where he received an award.
He said breakfasts at four- and five-star hotels often include too few products from Spain, pointing to balsamic vinegar from Modena as an example.
Adrià proposed that at least half of breakfast products be Spanish, so guests can try more of the country’s food.
He acknowledged that making this a requirement could be difficult because of administrative and legal obstacles.
He also wants good hotel meals to be affordable, especially at three-star hotels, and says the same should apply to restaurants.
His proposals link local food to tourism and to making good meals accessible to more people.

What people are saying
I don't understand how in four- or five-star hotels, at breakfast, most of the products are not Spanish. There is Modena vinegar... Can you imagine sherry vinegar in an Italian hotel? Come on, not even in the movies.
At least 50% of breakfast products should be of Spanish origin.
