This recipe is for yummy roasted carrots with crunchy walnuts!
First, you chop up carrots and walnuts and toss them with olive oil, salt, pepper, and some spices like cinnamon, coriander, chili flakes, and fennel seeds.
Then, you add little pieces of butter and roast everything in a hot oven until the carrots are super brown and a little crispy.
Finally, you mix in some raw garlic, which gets a little softened by the warm carrots, and serve.
It's a way to make vegetables taste really special by roasting them with fun flavors.

Spices and walnuts are roasted directly with the carrots, blooming in the fat.
Raw garlic is added at the end, mellowed by the heat of the roasted carrots.
Carrots are roasted at 220°C/200°C fan/425°F for 30-35 minutes until deeply browned and starting to frizzle.
The dish can be prepared ahead and rewarmed, and is suggested to be served with roast chicken, spelt, beans, or chickpeas.
