How Armenians in Calcutta Shaped Bengal’s Beloved Potoler Dolma

How Armenians in Calcutta Shaped Bengal’s Beloved Potoler Dolma

Dolma is a dish made by putting filling inside a vegetable or leaf.

It is popular in several West Asian and eastern Mediterranean countries.

Armenian dolma was traditionally made with meat and rice wrapped in grape leaves.

Armenians brought this cooking tradition to Bengal.

Grape leaves were difficult to find in Calcutta, so cooks used local ingredients instead.

Pointed gourd, called potol, eventually became the main vegetable.

Bengali cooks changed the cooking method by frying the hollowed vegetable and cooking it in gravy.

Today, potoler dolma can contain meat, prawns or cottage cheese and is served as a festive Bengali dish.
