Chef Kunal Kapur Introduces Saudi Flavours to India

Chef Kunal Kapur has introduced a special menu called The Saudi Table at One8 Commune in Gurugram.

This menu features delicious Saudi dishes like grilled halloumi, aubergine, cheese sambusa, and baklava.

Chef Kunal says that Saudi food is similar to Bihari cuisine from India, especially because both use a lot of the same ingredients.

The main difference is the type of oil used: Saudi Arabia uses olive oil, while Bihar uses mustard oil.

The event is part of a bigger effort to show the strong friendship between India and Saudi Arabia.

Chef Kunal has been learning about Saudi food by working with Saudi chefs and eating in Saudi households.

He finds that Saudi food is comforting and uses simple cooking methods to bring out the natural flavors of the ingredients.

The menu will be available for a week, from 12 December to 18 December, and includes dishes like kabsa, which is similar to Indian biryani and pulao.

The chef also points out that both countries have a long history of trading spices and rice, which has made their cuisines somewhat similar.

Overall, Chef Kunal believes that trying Saudi food is like wearing an old glove—it feels familiar and comforting.
